“Kalendamaia” is made from two different clones of Vermentino, a Corsican clone and a Tuscan clone, from two vineyards with these features:
- West and South-West exposed
- Clavey/peebly soil
- Age of vineyards: 18 years
- Training system: guyot
- Density: 5000 vines / Ha
“Kalendamaia” is produced following the criteria of guided control of parasites; selected manual gathering of the grapes; vinification without skin contact through soft pressing and temperature lowering through dry ice; controlled temperature during fermentation and clarification; ageing in bottles.
